Celebrating Warmer Temperatures ~ Fattoush Salad

With the weather warming up, my taste buds are into overdrive, anticipating the bounty of produce to come. I am especially looking forwards to fresh salads— yes, I could eat salad with every meal. Have you ever just craved a salad with big summer flavors? Like a big ol’ salad? I actually dreamt about it a few nights ago and had to make it— fattoush.

Fattoush salad is a middle eastern salad that uses stale pita bread as croutons. And it my most favorite salad in the world. It’s simple, fresh and easy to make. But what makes this particular one so dang delicious is the addition of sumac spices and the vinaigrette— a fresh mint dressing that’s it’s so ridiculously delicious and bright that I want to put it on basically everything. Lemony, minty and bright— it’s yummy! I am a big fan of mint and don’t use it nearly enough. But when I do, it is for this vinaigrette. And y’all, I just can’t stop eating it.

For the pita pieces: In a baking sheet, combine the pita bread pieces with a drizzle of olive oil— enough to coat them— and sea salt. Bake at 375F until they are golden and crispy. Keep an eye on this because it can happen fast! While still warm, sprinkle with the sumac spice and set aside to cool.

For the dressing, I used this Fresh Mint Dressing from Cookie and Kate. I tried other vinaigrettes and this is by far, my favorite with this salad.

Putting the salad together: In a large bowl combine 2 cups of romaine lettuce, 1/2 cup tomatoes, 1/2 English cucumber, 1/4 radishes and 1/2 cup crumbled feta cheese. Drizzle some of the dressing and toss to coat. Add the pita bread right before serving.
